Vinification

Calanchi di Vaiano Chardonnay grapes are manually harvested in the fall, and transported to the d’Amico estate winery for stalk removal and pressing.

The grapes are fermented in 80 percent stainless steel tanks and 20 percent French oak barrels. The wine ages by candlelight in stainless steel tanks for nine months, with two additional months in bottles as classical opera sings to the grapes.

Noe Orvieto grapes are harvested by hand and taken directly to the d’Amico estate winery for stalk removal. The must is chilled at 46 degrees and then immediately pressed. After cold settling for 36 hours, the grapes are fermented in temperature-controlled stainless steel tanks. The wine is bottled in the spring for immediate market availability.

Once pressed, the wine is transferred to 80 percent stainless steel tanks and 20 percent oak barrels, where it is aged by candlelight and classical music for three months. Seiano Rosso is available immediately once bottled.
